I didn't make the pastry the local supermarket provided that I just make the lemon bit. I used the following:-
7oz caster sugar
1 tablespoon lemon zest
4 tablespoons lemon juice
3 tablespoons plain flour
All mixed together and poured into the pastry case.
Then cooked for 20 minutes in a preheated oven on 180 C.
Once it is cooled it was dusted with icing sugar and then served with a strawberry or two.
